[Recipe] White Chocolate Macadamia Nut Cookies


Do you remember when I told you about my failed attempt of making a nice thank you gift for the doctor and the staff that I've been working with for the last couple of weeks? (Hint.) Well, I was given a chance to make it all good because I have to return to the health center tomorrow for some unresolved business (the doctor borrowed me a book that I now no longer need)


So, in order to make amends to the health center team, I decided to bake... COOKIES! This time, white chocolate - macadamia nut. I have never made this recipe before, so this was the perfect timing to try it out (#livingontheedge #yolo am I riiight?). 

Here we go. I prepared the ingredients in advance: 

100 g (3/4 cup) roasted macadamia nut - they are quite big so I cut them in quarters.

3/4 cup white chocolate chips - I didn't buy the pre-made, I simply chopped the chocolate. It's as good if not better!

In a bowl, mix the butter and sugar (I used the electric mixer), add the egg, the egg yolk, vanilla and a bit of salt.


Butter and 2 different kinds of brown sugar (disclaimer: this was purely my sugar preference, you are allowed to stick with white sugar... but I like to eat healthier).
I prefer buying vanilla beans and preparing them myself instead of using the vanilla extract. But either will work.

Then slowly (little by little) add the flour and baking soda. Soon after starting adding the flower I replaced the electric mixer with a whisk (and lastly with my hands... just try and make these, you won't judge me anymore).

Lastly, I added the chocolate chips and macadamia nuts, formed a mass and put it in the fridge for 30 minutes.



Then I used a spoon and hands to form the cookie shape, put them on a baking sheet and baked for 10 minutes at 170° C (around 325° F). But be sure to check them regularly when they bake, cause no two oven in this world are alike! (They're done when the edge starts getting just a tiny bit golden).

Et voila! I can assure you, I will not hesitate to bring these to the health center, afterall they might just be my all time favourite cookies.

Ingredients: 

2 cups + 2 tbs flour
1/2 tsp baking soda
3/4 cup (approx. 165 g) butter, softened
1,5 cup sugar (as you can see in the photo I used 2 kinds of brown sugar, which does add a bit of a 'tan' to the cookie)
1 egg
1 egg yolk
2 tsp vanilla extract/1 vanilla bean
1/2 tsp salt
3/4 cup white chocolate chips (approx. 100 g white chocolate)
3/4 cup chopped macadamia nuts

Instructions:
  1. Prepare the chocolate chips and macadamia nuts (see photo).
  2. In a bowl, mix butter and sugar. Then add the egg, the egg yolk , vanilla and salt.
  3. In a separate bowl, mix the flour with baking soda.
  4. Mix the two bowls together (by slowly adding the flour).
  5. Refridgerate for (at least) 30 minutes.
  6. Preheat the oven.
  7. Form cookies using your hands.
  8. Bake at 170° C for 10 minutes.
  9. For desired tastiness and consistency chill for at least 10 minutes.
